“Connecting HDMI output to TV and 5.1 speaker posts to wall speakers. Will I be able to turn off the sound from going to wall speakers when playing through TV speakers? I don't want to blast wall speakers all the time :-)”

Sure. Just turn off the amp that's powering the 5.1 system. OR turn off the receiver for the rear speakers, if that's all you want to eliminate.
