“Would I be able to use the 7 and 8 speaker output as surround back AND at the same time use zone 2 for height to create a 7.1.2 atmos sound? Or vice versa, use zone 2 for surround back and use 7 and 8 for atmos height? Thank you.”

No. You can use Zone 1 or Zone 2 but not both at the same time.
