“If I want the phone to be quiet every night from say 10pm to 6am, can the 'Do Not Disturb' be programmed one time so it's always quite every night, or do I have to reprogram or do anything else every single day?”

Silent mode only has to be set one time until you turn it off. Refer to pages 40 & 41 http://help.panasonic.ca/viewing/ALL/KX-TG3760/OI/TGD562_PNQX8351YA/TGD562_PNQX8351YA.pdf
