“I saw that the ventilation recommendations. I’d like to put this in a cabinet with a roll out shelf. Once rolled out it has 2” clearance on the left side, right is open and top is open. Will that met the safety requirements?”

That should be sufficient I have mine on counter with open left side and rearranged a bit to make sure had at least 2” on right. No problems so far!
Sorry, there was a problem. Please try again later.Placing in a roll-out shelf might not be secure, as this is a countertop model. For proper ventilation, a minimum clearance of 3.0 inches (7.5cm) is required between the oven and any adjacent walls. -M
