Hello! Yes, with the Roku Ultra, you can choose the audio format that best suits your needs. From the Home screen, go to Settings > Audio > Streaming audio format > Select (Auto, Dolby, DTS). You can also choose the Digital output format > Select (Auto, Passthrough, Stereo, Custom) in the same Audio Setting.

If your are using a receiver for sound, you can also select Passthrough, which lets the original sound signal be passed through to the receiver, where you can select how you want it processed. My Samsung TV has sound settings as well. Perhaps your Sony does, as well.
