“How do you turn the obnoxious beep off? The manual says to press < or > at the same time. I assume they meant press < and > at the same time. That does not work. Maybe it's < or > and something else?”

I can answer my own question. Pressing < and > together worked after the microwave was unplugged and plugged back in.
