“What is the actual temperature settings on hot? I see that there is a range, but if I set my hot water to 140F, is it really going to mix it with cold water to make it 125F. All I see otherwise is the option to Sanitize at 165F, and that is too high.”

Great question, MasterEL! This model does have an ATC (Auto Temperature Control) feature that enables the washer to control water temperatures in each washing cycle using the internal thermistor. You can read all about this feature on page 38 of the user manual (https://bit.ly/2Shxe34). ^Jecca
