Most Pixel Books use eMMC drives (soldered SSDs). Some i7 models use NVME. Not knowing the model number of your Pixel Book, I would say no it wouldn't. Check the specs on the machine. If it says eMMC, then no. If it says NVME, then you'll need a NVME drive to replace the original.
