“I have Dell OptiPlex 980 two 230GB WD 7200 RPM Hard drive, setup as RAID 1 using SATA3. How can I upgrade to new Samsung EVO 500GB SSD Drives (two of them) and setup the new drives to work as RAID 1? I am using Win 7 Professional32bit. Thanks in advance”

Yes you can - but you will probably sacrifice some speed with the Intel RAID config. The throughput will be faster with only one drive in AHCI mode. I would suggest using a single drive - and just back it up to the second one.
