“I have a Lenovo Legion Pro 7i Laptop with a 1TB SSD installed. I want to add a second SSD and even possibly upgrade the main SSD as well. Can this be done same day in store if I bring my laptop with me? What is the typical cost if so?”

depends on if it has a 2nd PCI M.2 slot available for expandable storage, if not, partition the current with an external m.2 enclosure and replace it with the 990 SSD and get a 2 or 4 TB. The 4 TB runs around 350 I think but that's more memory than you'll most likely ever need depending on use case
