Unlocked is if you want it to have its own number with your phone company so you can use it independently of your phone. (You don't have to carry your phone everywhere).
GPS uses Bluetooth to connect to your phone. Meaning certain functions won't work if you're away from your phone.

Unlocked is the LTE version where you can make & receive calls & texts so you can leave your phone at home & still get calls. Unlocked just means that it's not tied to a specific wireless carrier so you can connect it to whichever carrier you have. GPS will also allow you to make & receive calls & texts but the watch must be in range of the phone.
