“Listening to spotify, youtube, etc when on the phone all sounds very icky like the quality of Waiting On Hold music. Also, the phone call volume and video are not separate which makes hearing the call over the video very difficult. Are there solutions?”

This is not normal of these buds, I’d say return them and if the problem consists then I’d look at your phone settings.
