“Wall mounting brackets don't match wall studs The brackets for mounting to the wall are spaced 34.25 inches apart, whereas standard stud spacing would be 32 inches. What is the best workaround for this. I do not have dry wall, just thin paneling on 2X4 studs.”

Don't worry about using studs for something this light. There are a variety of hollow wall anchors that could work. I suppose if you could put one end in a stud, that might give you more peace of mind. If you cant find a hollow wall anchor (like for mounting on doors, for instance), a toggle bolt might be your next best option, but may require a bigger hole.
