“Will this TV connect with HomeKit and/or Airplay such that I can remotely control On/Off, Inputs, Channels, Volume, etc? I am trying to have a setup for a senior person living in another home address as he often needs troubleshooting.”

Yes the TV integrates directly into HomeKit and is visible as a HomeKit device inside the home app.

I think it will be okay. There are four HDMI slots in the back plus the standard cable and headphone connections. It's a great, programmable TV!
