You are not going to get true 240 frames per second like on a 1080p/1440p gaming monitor. 4k @ 120 frames per second works great on PS5, very cool gaming experience. There are some motion smoothing settings that insert black frames (backlight strobing) or interpolated frames in between real frames that may work as fast as 240 separate images each second (incl the ones the tv creates, not from the original content). Sony isn’t super clear on exactly what the technology is doing behind these features. Keep in mind, your hdmi 2.1 connection can only handle 48 gbps. So 120 frames per second at 4k is the only information coming from your video source. If you need more frames per second and are willing to compromise on cinematic picture quality, there are monitors that will better suit your needs.
