“I want to buy this as a gift.. but I'm not familiar with these things as I don't use them. Why does the description say single player? Can you not buy a second controller for multiple players?”

Single Player can refer to the game itself, yes. However if Online Multiplayer is offered, you will need to purchase a membership to playStation Plus in order to play online with others. Games such as Sports games have the ability to be Two Player Local to the Console (With an additional controller), but anything played with others not on the console see the statement above regarding PlayStation Plus.
