Stores usually have pre orders in stock before release date... So as others have said you should be able to get it on release day.

Typically, it should be available for pick-up the day it comes out. I have pre-ordered multiple consoles and typically always choose the pick-up option, and was able to pick it up the opening of release date (10am is what it is down here in IL). When you pick "store pick-up" for the pre-order, it should let you know the date it will be available.
