“How do we get the access code to play the game? Since it's a physical edition, and we get the code physically, how are we suppose to play the game 5 days early? Do they send us a code online first?”

If you buy the Starfield Constellation Edition you your download code will comes with the package. You get access to the game when you're able to redeem the code. As for shipping, you will get a ship date when placing your order. Personally I selected the option for pickup to avoid any issues with shipping.
