• Yes, just follow the instructions in your recipe, and select the level of browning you want on the finished loaf. You can also use the dough setting if you want to shape the loaf yourself.

• Yes, just use gluten-free flour instead of regular flour they tell you to. This is a problem with their recipe booklet - it's great for beginners but leaves one out cloud for more complex recipes or going outside the norm.
