“If I were to get a cat 6 or cat 7 Ethernet for these devices would it give my ps4 better speed because the ones that come with it are only 5e? And if I were to get cat 6 or 7 would I need just one for the one that connects to my device or two?”

Cat 6, 6a and 7 in theory should increase your speeds, though to what degree seems to vary greatly with every user. I use 6a so have one from my router to TP-Link unit 1 and a second 6a running from TP-Link unit 2 connecting to an Xbox in the living room.
