“Are the RCA outputs at line level or at phono level? In other words, do I need to take the RCA outputs to a preamp first before going to the aux input on my sonos AMP? The aux input on the Sonos is expecting line level.”

You can connect to speakers either via bluetooth; or by direct wire to speaker connection. You do not need to connect to any auxilliarary amp.
