In Windows, when you bring up the virtual keyboard on your device, there should be an option to pick different formats of keyboard inputs. The one for Ink to Text is an icon that looks like a blank line for you to write on. Pick that icon as your keyboard input and it will detect the words as you write them, but it isn't always the most accurate.

In other words, that is a question for the manufacturer of Office 365, Microsoft.
