“I have one of these. If I buy 2 new drives, can I swap those in and then later remove them and swap the original drives in with different backup sets on each pair of drives? Potentially having 3+ pairs of drives I rotate for offsite backups?”

Yes, it possible, if you want to take backup on a new pair of drives each time. Changing only one drive can lead to data loss. We always recommend to take data backup from the drives before making any changes to the device.
