“Is the user able to replace the drives or does it have to be sent to manufacturer.? If the user is able to replace the drive , will the newly installed drive mirror the other drive?”

Hello Snappy, Please be informed that My Cloud EX2 ultra is an user serviceable device. You could change the internal drives of the device by yourself. If you want to mirror the drives then please configure the device to RAID 1 configuration so that if one drive fails then the data is protected in the other drive.
