“does this machine keep ice frozen until ready for use even if left for a few days”

Yes. it keeps ice cold. I keep it on, and then pull the ice out and put it in our main floor freezer when that bin is low on ice. I do notice some ice evaporation (ice slowly gets smaller) as it stays in it for more than a couple days.
