“Is every HDMI input on thie RX-A6A HDMI 2.1 capable? Or is it only a select few?”

All are HDMI 2.1 capable as long as the firmware is up to date.

In theory, all 7, but as of April 2022, there is still no firmware update for HDMI 2.1.

As of now, none are. However, after the promised and advertised firmware update they all will be.
