It's curved edges are meant for better water mixing resulting in more even cooking. Anova Sous Vide devices fit perfect in the designated slot, preventing much evaporation and trapping in the heat. The rack that is included keep the bags of food completely submerged to ensure a full cook. Overall, this is the perfect compliment to a Sous Vide cooker.

It puts a lid over the hot water so so don't have to refill it anywhere near as often. It is less heat loss do to it being plastic. It feels durable. It holds a lot of water. Did I need it? My sous vide machine works just as well without it. It's hard to store as it is very big. Worth the purchase, only you can decide for yourself. For me, I think it was worth it.

I went on to find some great recipes online and some how-to videos on YouTube and I got to tell you the filet mignon that I bought came out restaurant style. I have never cooked anything sous vide, but I am going to be doing a lot more of it. This is so cool.
