A: I am not sure that I am qualified to answer this completely, but what I can tell you is that I have cooked in several enameled cast iron pots + pans (Le Creuset etc.) all of which have worked just fine. The usable surface is just under 11 inches, I have included some images for reference including a page from the manual about selecting cookware.
Q: How big is the heated surface, will this boil water in a 5 quart pot ?
A: The usable surface is just under 11 inches (10 7/8"). [I think you may be able to use larger dishes than that, but not sure about the weight it can hold.] If the dish you are using covers the buttons, you can still control it from the smartphone app. It boils water just fine. I haven't tried boiling water in my 10-inch 6 qt, but I did deep fry in it. In fact, it heated a 6qt pot of oil to 350 so fast I was deep frying french fries in about 10 minutes. Oil got cold-ish, but one top was able to keep up. Hope this helps.
A: In an induction cooktop ("induction hob" or "induction stove"), a coil of copper wire is placed under the cooking vessel and an alternating electric current is passed through it. The resulting oscillating magnetic field wirelessly induces an electrical current in the vessel. This large eddy current flowing through the resistance of the vessel results in resistive heating. https://en.wikipedia.org/wiki/Induction_cooking (source)
