I am not sure that I am qualified to answer this completely, but what I can tell you is that I have cooked in several enameled cast iron pots + pans (Le Creuset etc.) all of which have worked just fine. The usable surface is just under 11 inches, I have included some images for reference including a page from the manual about selecting cookware.
