VG-MAX STEEL CORE: Shun's proprietary VG-MAX stainless steel core is clad in 68 layers of stainless Damascus, 34 per side, which support the core, add stain resistance and help food release.
16 DEGREE EDGE: Single-bevel serrated edge sharpened to 16 degrees. Serrations grip and cut foods with a firm crust or skin and a soft interior without tearing.
D-SHAPED BLONDE PAKKAWOOD HANDLE: Moisture-resistant resin-impregnated hardwood, comfortable for left- and right-handed users, with a full composite tang and stainless steel end cap. Handle length 5.1 in.
HANDCRAFTED IN JAPAN: 9 in (229 mm) blade, 14.6 in overall, 7.1 oz. Hand wash and dry right away; not dishwasher safe. Limited lifetime warranty.
