The Shun Premier Blonde 9.5 in Slicing Knife is built for carving and slicing cooked meats. The long, narrow blade lets you cut each slice in one long stroke, with less friction and no sawing or tearing, so slices come out thin and even and more of the juices stay in the meat. It also handles large vegetables. The blade has a core of VG-MAX, Shun's proprietary stainless steel, clad in 68 layers of stainless Damascus (34 per side) that support the core and add stain resistance. The fine edge is hand-sharpened to 16 degrees per side, and the hammered tsuchime finish helps food release from the blade. The contoured blonde PakkaWood handle is resin-impregnated hardwood that resists moisture, finished with an embossed end cap with brass trim. Blade length 9.5 in (241 mm), 15 in overall, 7.3 oz.
