This unit has a temperature range from 1-10 so if you wanted the lowest you could set it to 1 and it would keep your pan warm or sort of a simmer. It actually comes with an owners manual that gives the power level, watts and cooking level for each number. For example, setting the power level to the lowest number 1 uses 120 watts and the cooking level would be "simmer/keep warm. If you set it to 10 then it uses 1300 watts and the cooking level would be high/boiling.
