“Would this work with say a game console ps4,xbox one or ideally the Nintendo switch? looking to build a screen to use and keep at work and just take the switch and this to get my video game fix on the overnight shift at work.”

Yes the P3-X will work with all gaming consoles as you would just connect through the HDMI connection.
