You don't have to actually take the rack out of the oven, you just aren't supposed to put food on more than one rack after using that kind of rapid preheat.

The rapid preheat function heats the oven air quickly but the oven shell does not completely heat soak in that short period of time. This is fine for cooking on one rack. Loading the oven with 2 racks of food before the shell can come to full temperature may cause the oven to be under-temp during initial cooking. It will take time to catch up and this may affect cook time or the quality of your dish. If you're baking on two racks, use the normal preheat. If you're simply reheating something, go for the quick heat.
