No, you do not need a vacuum sealer, you can put your food in a ziploc bag, don't seal the bag yet, then slowly put the bag into the water (opening end up) then the air will evacuate the bag. Seal the bag once the water level is at the zipper.

An alternative is what is commonly referred to as the immersion method where you submerge nearly the entire bag with exception of the open end to force the air out of the bag. All the bags I have seen for sous vide / vacuum sealing are BPA free but it's best to check the details before buying them. Additionally, some companies make silicone bags that are washable and reusable.

Have you ever stuck your hand in a bag and then into water? The pressure from the water will seal the bag around the food, just use a chip clip or something to hold the top of the bag to the rim of your pot so water can’t get into it!
