It goes up yo 197 degrees. You can set it to tenths of degrees. The Time limit is 99 hours and 99 minutes.

One recipe for salmon was 115 degs for 45 mins, then braised after. You can sous vide for as long as 4-5 hours for some things. I believe the recommendation is no hotter than 190degs.
