“I have recently bought the air pods pro and they have little lag spikes and sometimes glitch for a couple seconds when i'm listening to music and I'm just wondering if its the air pods, the Bluetooth connection, or my iPhone. I have an iPhone 7 btw.”

I am absolutely no expert, but when I saw this question, I felt I should mention that I recently had to return mine because I too, experienced some sort of issue when listening to music....almost like a static sound occasionally. Unfortunately, that coupled with the fact they wouldn’t stay in my ears forced me to return. Very disappointed. I hope yours work better for you.
