Yes, the AirPods can be connected to your watch via Bluetooth and will always be in close proximity to each other as long as you are wearing your watch. Furthermore, as long as your watch is close enough to be still connected to your phone or you have a 3rd generation Apple Watch with data then you shouldn’t have a problem taking the call through your watch and talking and listening via your AirPods.
