I believe the "S" stands for "secure." The idea is that you can only use programs from the Microsoft store, which have been certified as safe (no malware). By "coincidence," though, it also excludes many popular programs, such as the Chrome browser. Fear not, however, Microsoft offers an easy way to remove the "S" aspect, so you can install any software you want, no matter how "dangerous" :). People will tell you that this procedure is IRREVERSIBLE, but that is not true. However, the procedure to return to "S" mode returns the computer to factory-fresh condition, meaning it WIPES OUT ALL PROGRAMS AND DATA, so it might as well be irreversible, unless you are returning it to the seller or selling it yourself to some else and don't want your personal information going with it.
