“Are you able to unlock using either the Homekit app or Siri from the Apple Watch? Or does the lock only recognize uses from smartphones? Thanks in advance!”

Anything Siri / Homekit enabled works. You have to enable that ability. But yes, I use my watch and we have it set for Apple HomePod. You can also use it in scenes, so like, when I come home and the door unlocks, also run on the Hue lights and play smooth Jazz on the HomePod.
