• When I made an omlet, I put the cheese in the egg mixture. I assume that you could also add it after the omlet is ready.

• Personally I just beat the eggs and add the cheese shredded and incorporated throughout. Would guess you would have to make the omelet then let the cheese just melt on top if that's what your looking for.
