In this specific instance its because proposition 65 in California, where Bella makes their stuff, requires coffee makers to list this warning because, when coffee is roasted, it produces acrylamide, a chemical linked to causing cancer. But likely nothing in the actual machine does so. It is because the machine makes coffee.
