• Each is 4 quarts, for a total of 8 quarts. That is why it is not called a 16 quart fryer.

• You cannot fill it to the top as per the directions you cover the bottom that is it. It is about 5” deep, about 5” wide and 9” long. So fries you cover the bottom and start the unit.
