“My countertop is 36"tall, the cut out height for this stove is listed as 35.5" would this stove still work in my space? Are the metal side flaps bendable or does it have adjustable footpads to ensure the metal side flaps lay on top of my countertop?”

Flaps are not bendable. You have to adjust the feet to the right hight.

Model:HGI8056UC here are the dimensions for the range:Overall appliance dimensions: (HxWxD) (in.) 36 1/2"–38" x 31 1/2" x 29 3/16". Required cutout size: (HxWxD)(in.) 35 1/2"–37" x 30" x 25 1/4". Adjustable range height: (in.) 1 1/2". The metal sides are not bendable but due to the adjustable height it does give some leeway.
