This comes with 2 stainless steel racks, an enameled bake pan. A round pizza pan. And an open basket rack. If you use the open basket rack to roast it will toast on both sides at the same time. You must have used the baking pan before to toast and yes, that would only be able to toast one side at a time. Also, make sure your crumb tray is slid into the bottom area of your oven so that it doesn’t leave a trail of crumbs for you to have to clean up! Hope this answer helps.

The wire rack naturally deflects a significant amount of radiant heat, and therefore toasting less than the top of the bread, which is exposed to the heating elements without the rack in the way.
