Hello Dale - Thank you for your question. Before first use, rinse with hot water and dry thoroughly. Prepare the surface with cooking spray or vegetable oil. After each use, apply a very thin layer of oil to the surface to maintain the seasoning. Re-seasoning Instructions: Clean the surface of the griddle by removing as much of the seasoning as possible. Heat your oven to 350F. Coat the griddle with a thin layer of oil and place it in the oven for one hour. Allow the griddle to cool and repeat as necessary to restore the seasoning.
