Chefman does not specify in the owners manual the type of coating used. The inside is stainless and the coating is clear. Try Chefman customer service

I've had pizza cheese drip through & grease splatter from bratwurst blacken but it wipes right out with a dishcloth. The removable trays fit in a sink, run water in it and swish a discloth and they wipe clean. I've been plesantly surprised.
