George, It's possible that your oven temp gauge is not accurate. Some of them can be calibrated to assure accuracy. I owned a restaurant for 30 years and we had several convection ovens as well as regular gas ovens. Of course they were all commercial and much bigger, however I think the theory is the same. Convection ovens cook at lower temperature and faster than regular ovens so you can't go be what the recipe says and it's just trial and error until you figure it out. For example, Baked potatoes in our regular ovens cooked at 425 for an hour where as in the convection ovens it was 350 for 45 minutes. Good luck
