“I have 11" x 17" sheets to scan. If I fold them in half, they become 8.5" x 11". Can the scanner handle a folded sheet as if it a single piece of paper?”

I have not tried that. All my scans so far have been 8.5x11.

No, it causes a paper jam. It might work if you seal the bottom edge but then you might as well cut the paper to letter size.
