With mine they start over again whenever the clock turns over at midnight. If you change time zones you need to be sure to resync your watch to your app (phone or iPad)

Sorry, there was a problem. Please try again later.Start over at the begging of each day. Actually start over at midnight, I was walking around right around midnight and it started counting my steps for the next day.
Sorry, there was a problem. Please try again later.Your progress is tracked per 24 hour period so at 12am it sets back to 0 steps, calories, miles, etc. All of the progress is tracked on the FitBit app so you can see your daily progress for the week there.
